VINIFICATION : No chaptalization, no yeasting. Whole grain fermentation in vats for 25 days without pumping over to the pump, only foot treading every 3 days (5-10 minutes). 30 months of aging in oak barrels of 5 wines. Bottled in the barrel cellar in July 2020.
