Vinification: The grapes are harvested after waiting for optimum maturity. Direct pneumatic pressing. Cold settling, 48 hours. The vinification of this prestige cuvée was made in the most traditional and meticulous way, the slow and regular fermentation preserves the floral and mineral aromas of the grape variety intact and natural. In order to bring more complexity, our wines are aged on fine lees for 9 months. Bottling takes place in June or July. The bottles still remain between 10 to 12 months in our aging cellars before being put on sale
