Soil: Kimmeridgian marls
Grape variety: 100% Sauvignon
Vinification: The grapes are harvested after waiting for optimum maturity. Direct pneumatic pressing. Cold settling, 48 hours in order to preserve the aromas as much as possible and to bring more complexity, our wines are aged on fine lees for 9 months. Bottling takes place in June or July. The bottles still remain between 6 to 8 months in our aging cellars before being put on sale
Tasting: Crustaceans and shellfish. Fish (pike perch or pike in white butter). Goat cheese To try with a scallop crumble with saffron and dill
Sensory characteristics: Pale gold coloured wine with yellow reflections. An intense nose of white flowers mixed with honey and exotic fruits. On the palate, aromas of pear and peach mixed with grapefruit and guava on an extremely smooth wine base, nevertheless enhanced by a mineral and fresh note due to a present and light acidity
