Technical elaboration criteria: The very qualitative Pinot Noir grapes come from old vines and pampered from plot to bottle. A first sorting of the berries is carried out during the plot selection. In the cellar, 6 people carry out a second sorting in order to select only the most qualitative berries. The grapes follow a traditional quality vinification. They ferment in stainless steel vats exclusively for this purpose for 3 weeks. At the start of vatting, daily punching down followed by pumping over over the last few days allows the aromatic potential of the grapes to be extracted. The wine is then aged in 300L barrels for a minimum of 12 months, the time necessary to round off and enhance the fruitiness and depth very characteristic of the 2013 Sacrilège cuvée
Sensory discovery: Sacrilège is a magnificent and atypical Pinot Noir from Sancerre. On the nose and on the palate, the aromas of black cherries, blackcurrants and crushed blackberries, characteristic of the grape variety, develop in finesse and power. On the palate, this red Sancerre wine is full and generous. It presents a nice balance and ends on a slightly spicy finish. The tannins are smooth and silky thanks to the aging work. The length never ends, much to the taster's delight
Food and wine pairing: Nicely spicy, pleasantly fruity and perfectly structured, Sacrilège is a Pinot noir that will go wonderfully with pieces of beef, chicken with spices or duck with orange. Aging will bring softness and delicacy to this red Sancerre. Sacrilege will then be the perfect companion for cod back or red mullet fillets
